IN.FORM Recipe: Veggie & Chickpea Salad

Salad Ingredients

1 can organic chickpeas or cannellini beans (drained & rinsed)

chopped red bell pepper or any other veggies (cabbage, broccoli, cauliflower, etc)

bowl full of spinach or any other greens you like

thinly sliced brussel sprouts

feta cheese (optional)

pine nuts (optional)

chopped purple onion (optional)

Veggi Chick Pea Salad

Dressing Ingredients

1/2 c Organic Extra Virgin Olive Oil

1-2T lemon juice

1T Cumin powder

1T Garlic powder

1T Onion Powder

NSP’s Sea Salt to taste

Black Pepper (fresh ground) to taste

Add other spices to personalize it!  Enjoy!!

NOTE:   Depending on how big of a bowl of veggies you put together, you may need to make more or less dressing.  If you make too much, just put the extra in the fridge for your future salads! This salad stays nicely in fridge for several days, so I make a big bowl and eat on it for days!
