Healthy Meals from Around the World: Guatemala

This traditional Guatemalan recipe will help you get your vegetable servings. If you are growing mint in your herb garden, it gives you one more way to use it. The name of the dish is Picado De Rabano.

Here’s what you need:Picado De Rabano

½ teaspoon garlic powder

1/8 cup lemon juice

¼ cup fresh mint (if you don’t have fresh mint use a tablespoon of dried mint)

¼ cup orange juice

1 pound radishes (you won’t use the greens in this recipe but you can serve them on the side to complete your meal.)

 

Preparation:

Thinly slice your radishes and set aside in a small bowl.
Mince the mint and add it to the radishes.
Add the lemon juice and orange juice.
Add garlic powder.
Add salt and pepper if you wish.
Mix and let it chill for half an hour.

Eat and enjoy the sweet mint flavor as it mixes with the bitter radish.
