What is cinnamon and where does cinnamon come from?

Cinnamon that is sold in the United States most often comes from the inner bark of evergreen trees that is grown in Indonesia, China and other countries in Southeast Asia.

How is cinnamon made?

The bark is removed from the tree. Once it is removed, it is scraped into thin pieces. The larger pieces are dried and ground into powder. The tips of narrow branches (quills) are dried and become the cinnamon sticks you can purchase in the store. This is all done in a way that does not destroy the tree so that it is able to be harvested repeatedly.
